What is it?
The black bream is a dark-grey sea fish with tough scales that need to be removed before cooking. It’s not a hugely popular fish so is relatively inexpensive, but it has sweet firm flesh and is delicious eaten whole after being stuffed and baked, or as fillets.
Preparation Options
You can have this fish whole or in fillets. If it is whole it will need to be scaled and gutted, you can leave the head on or have it taken off. You get two fillets off each side these will contain a few pin bones.
Is it sustainable?
European Organic Standards for farmed bream set standards for cultivation which includes third party auditing and inspection. These standards lead to better overall environmental performance as a number of negative environmental impacts are addressed.
