What is it?
Trout can have an earthy flavour, particularly if caught in the wild, and therefore benefits from citrus and acidic flavours including lemon and capers. Our trout are mostly farmed but we occasionally get ones from Chew Valley which are from farmed stocks put into a wild lake.
Preparation Options
Our trout are usually already gutted, you can have the heads off or have them fillets. The fillets will still contain lots of pin bones.
Is it sustainable?
Trout are very sustainable as the fisheries are well managed and minimise their impact on the environment.
